Steak and Taters

Ok not quite … but I made this last evening for dinner and it was divine! Quick, super easy, and filling.

Cauliflower Mock Mashed Potatoes

  • 1/2 head of cauliflower – washed and cut up
  • approx 1tbl olive oil (may use organic butter)
  • 1 to 2 cloves of garlic
  • sea salt to taste

Boil cauliflower till fork tender. Drain. Place cauliflower, Olive oil or butter, and garlic in food processor. Blend to smooth and creamy. Add salt to taste.

Eggplant Steaks

  • 1/2 of a medium sized eggplant
  • olive oil
  • sea salt to taste
  • pepper to taste

Wash and dry the eggplant. Slice in thick slices longways. Drizzle olive oil on both sides. Sprinkle each side with salt and pepper. In a frying pan on medium high heat, place the eggplant in the pan. Cook for approx 2 mins on each side. Remove from pan and eat hot!

I’m sure you can get creative with this by adding herbs, lemon, more garlic. Have fun with your veggies and experiment!
